This bacon scrambled eggs & avocado toast is the most delicious start to your morning you’re ever going to have! It’s so good you’re going to want to have seconds!

When thinking about breakfast options, I always go for scrambled eggs on toast! They’re my favourite thing to have because they’re packed with protein, which keeps me feeling full for longer, and they’re also freaking delicious.

However, simply putting eggs on toast would not be the best combo if I wanted to go for a complete meal that would keep me satiated the entire morning. That’s why I turned it into an avocado toast.

Avocados are known to be a healthy source of fat that helps satiate you for longer periods of time. They’re full of nutrients and taste amazing. Then came the bacon… I’ve been doing scrambled eggs with bacon like this for a while now and knew how good it tasted. It just add a whole new level.

I know bacon isn’t the best of ingredients, but this is what I’m living for – moderation.

Now, these scrambled eggs have no milk or cheese or olive oil. Don’t worry, they’ll still be amazing without it. The only thing you’ll need it the bacon fat that’s left in the pan to give it flavour. Please use a non-stick frying pan or this is going to become difficult to do. 

The secret to fluffy scrambled eggs is to not overcook them. Once you see them browning a bit on the bottom of the pan, they’ve cooked to much. You want that gooey consistency, that’s almost cooked but not fully cooked. This will make your eggs taste like heaven.

You can also add other toppings of your choice like veggies or spicy sauces if that’s what you like. One thing that would be so good with this is to have something crunchy on top like swedish fried onion bits, but I won’t do it if I’m not feeling especially hungry, since these are very high in calories.

Bacon Scrambled Eggs & Avocado Toast

  • 60 gr bacon diced
  • 4 eggs
  • 1 avocado
  • 4 slices whole wheat bread
  • salt & pepper


  • Fry the bacon pieces in a large pan on high heat. Let it release all the fat into the pan and get a nice golden color.
  • Whisk the eggs in a bowl and season with salt & pepper. Add them on top of the fried bacon in the pan and let them cook. Scramble the eggs until they're done.
  • Lightly toast 4 slices of bread.
  • Divide the avocado between the 4 slices, mash it and spread it on top. Season with some salt & pepper.
  • Pour the bacon egg scramble on the toasts dividing evenly.
  • Top it with some more pepper ot fresh herbs like chives, parsley or dill.
