Ingredients

  • 5 medium carrots
  • 2 small onions
  • 1 tbsp olive oil
  • 3 cups diced pumpkin
  • 4 cups water
  • salt & pepper
  • 1/4 tsp ginger
  • 1/4 tsp cloves
  • 1/4 tsp cinnamon
  • 1/2 cup almond milk
  • sour cream (optional)
  • rosemary (optional)

Instructions

  • In a large pan, add carrots, onions, olive oil, pumpkin, water and spices. Let cook over medium-high heat for about 35 minutes.
  • Add the almond milk, and using a hand blender, blend it all together.
  • Top with some sour cream and rosemary for garnish and serve!
