If you are looking for the perfect creamy vegetable soup recipe, that is low on calories, and helps you lose weight, then you’ve come to the right place!
Here is the recipe for my special, unbelievably easy, creamy vegetable soup. This is the perfect comfort food for those cold and rainy days when you just want to stay inside and watch a movie.
It is also a good option to take on the go in a container and heat up later. I made this recipe full of lots of different veggies to help your skin, and deliver nutrients and vitamins to your body. As an added bonus it helps you lose weight! It is full of fiber, protein and, at the same time, it is very low on carbs.
Creamy Vegetable Soup
- 100 gr courgette
- 100 gr white cabbage
- 150 gr carrots
- 100 gr onion
- 50 gr turnip
- 20 gr lettuce
- 425 gr white beans
- 1 1/2 liters water
- 1 tbsp olive oil
- Wash all the ingredients and cut them up in little cubes (½ inch or 2 cm cubes). The smaller you cut them the quicker they will cook.
- Put the water in the kettle and boil it.
- Prepare a large pot, whatever one you have that can fit all the ingredients in it. Add the ingredients, and pour the boiling water on top. It should cover the ingredients slightly.
- Let it cook on medium heat for about 30 minutes. Keep stirring every 5 minutes.
- After the 30 minutes, it should be thoroughly cooked, if you cut them as finely as advised.
- Pick up your wand blender and shred everything into a creamy soup. You can also put it in the blender but it’s just not practical.
- There you have it! A creamy low carb and low calorie soup. Flavour it and enjoy!
This creamy vegetable soup comes in just a little over 50 calories per serving. This whole pot can have 10 servings. It is enough to last you the entire week for those times when you want something healthy on the go.
Now let’s talk about the benefits of this amasing creamy vegetable soup, other than it being a low calorie soup:
Courgette / Zucchini helps with your heart health, containing potassium which helps lower your blood pressure, and magnesium that helps you keep your blood pressure at a normal rate.
It also helps in weight loss, not only because it has very few calories but also because it contains a lot of fiber which helps to burn fat faster.
Zucchini is 95 % water so it keeps you hydrated.
Cabbage, on the other hand, due to its high amounts of Vitamin C is a great antioxidant agent. It is also a great anti-inflammatory agent due to a high content of glutamine.
Adding to that, it can help prevent cancer, due to its anti-cancer compounds.
Cabbage supports your digestive track and regulates your cholesterol. With its amount of Vitamin C it also helps with your skin care.
Like most vegetables, turnips are low in calories and quite nutritious. And like most vegetables they help with cancer prevention, heart health, bone health, lung health, and aid in digestion.
Turnips have antioxidant qualities that do wonders for your skin and hair.
Carrots are a great vegetable as well, helping you prevent heart disease, lower blood pressure, boost immunity, prevent cancer, etc. At the same time it helps with your digestion and improves eyesight due to its high levels of beta-carotene.
Onions contain chromium, a substance known to be significant at regulating blood sugar. They also contain a compound called quercetin which is known to help prevent cancer.
The amount of Vitamin C in onions can also boost your immunity.
Spinach is a rich source of beta-carotene, making it a great aid in your eyesight. It is rich in components like potassium, folate and various antioxidants. Providing amazing benefits.
The regular consumption of spinach can increase blood flow to the brain, improving concentration, cognition and neural activity.
Spinach is a good aid in strengthening muscles and boosting your metabolism due to its impressive high amounts of protein.
