The best simple & quick lunch you could make is this easy tuna salad. You can throw it together in under 15 minutes, or even make it ahead to take with you on your day. It’s full of protein, super flavourful and will leave you feeling full, yet light so you don’t get that afternoon slump. 

Whoever said salad was boring probably didn’t know how to combine ingredients like this. This easy tuna salad is crunchy, savoury, sweet and super moist and creamy (hello yogurt dressing!). It’s super easy to make and actually tastes delicious! All of this comes in under 300 calories a portion. 

 

The best way to make this recipe under 15 minutes is to boil the egg first of all, and while they’re boiling address the rest of the ingredients.

 

If you can’t seem to get a perfect boiled egg, I’ve been there and I’m going to give you the secret to a perfect boiled egg. In a small pan bring enough water to cover the egg to a boil. Don’t add the egg until the water is boiling, or it will be harder to peel later. Once it’s boiling add your egg and put a timer for 9 minutes. Keep the water boiling for that time, just watch over it so it doesn’t go over. Then, remove the egg and place it in cold water for about 2-3 minutes just to cool down. Peel it, and dice it. Add to your salad and it’s done!

Using canned tuna is also the best way to get lean protein fast. And, it’s also super tasty, so win-win. I do use canned sweet corn as it is easier to use when in a hurry, just make sure you check the ingredient list to prevent unwanted unnecessary ingredients (like sugar, I swear sugar is in everything… but sweet corn is naturally sweet and shouldn’t have sugar in it!).

As for leafy greens, I love arugula and baby spinach. These are full of vitamins and minerals.

Ingredients

  • 2 cans of tuna
  • 2 eggs, boiled
  • ½ cup corn
  • 1 cup spinach
  • 1 cup arugula

For the dressing:

  • 1 tbsp yogurt
  • ½ tsp garlic powder
  • 1 tsp vinegar
  • 1 tsp olive oil
  • salt & pepper

Instructions

  • Make the base of your salad by combining baby leaf spinach and arugula. 
  • Top with tuna, diced boiled eggs and corn.
  • Make the dressing by combining all ingredients and whisk them together. Toss this with the salad and serve!
