Although I’m not vegan, I do like to have plant-based meals often to reap the benefits that come from all those fruits and vegetables. This salad is for any lover of organic healthy foods!

 

I usually cook the quinoa in advance to make it easier to assemble when I need to make this recipe. Or I’ve tried getting cooked quinoa, which wasn’t a bad option either. When it comes to lentils, I highly prefer canned brown lentils. This way they keep their form and texture much better unlike when you cook them yourself. This also applies to corn. I usually buy sweet corn canned and use it in all of my meals. Of course, whenever you buy something canned beware of the ingredient list as many of these products may have unwanted ingredients.

This superfood salad is actually really easy if you already have the cooked ingredients in your fridge and all you need to do is assemble it. So, this way, this salad is awesome for meal prep.

Ingredients

  • 1 cup cooked quinoa
  • 1 cup cooked quinoa
  • ¼ cup corn
  • 4 cherry tomatoes
  • ½ avocado
  • 1 cup shredded spinach
  • 1 cup shredded lettuce

For the dressing:

  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • salt & pepper

Instructions

  • Make the base of the salad by combining spinach, lettuce and quinoa in a large bowl.
  • Top with chopped cherry tomatoes, diced avocado, corn and cooked lentils.
  • Make the dressing by combining olive oil, lemon juice, salt and pepper. Toss with the salad and serve!
